the fourth.

despite the fact that we spent the first half of our day eating sushi on top of moving boxes, (come on, sushi should be granted american status by now)… our independence day was just perfect.

our first fourth of july in new england was filled with a traditional celebration. this is one of my favorite holidays, and while we kept things fairly low-key this year {since we had just moved five days prior to the holiday}, i still adore the community kumbaya feeling as you spend time with neighbors and friends.

i tried two new recipes for our american birthday cake -

WHITE CAKE:

you will need:
1 (18.25 ounce) box white cake mix
1 cup all-purpose flour
1 cup granulated white sugar
3/4 teaspoon salt
1 1/3 cups water
2 Tablespoons vegetable or canola oil
1 teaspoon vanilla extract
1 cup sour cream
4 large egg whites

directions:
1. Preheat oven to 325°F. Place cupcake liners in cupcake pans (you’ll need approx. 36).

2. In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes, or until well blended.

3. Use ice cream scoop to fill prepared cupcake tins- fill about 3/4 full. Bake about 18 minutes, or until toothpick inserted in center comes out clean.

Tips:
*Recommend: Duncan Hines has reduced the size of their boxed cake mix now… so I’d use Pillsbury or Betty Crocker instead (look for 18.25 ounces)
*You can use either regular or light sour cream for this recipe, I recommend going for the full-fat kind.
*Add 1 teaspoon of almond extract (in addition to the vanilla) if you wish to have a different flavor.
*Using an ice cream scoop is perfect for getting the batter into the cupcake tins without spilling.
*You can also use this mix to make cake. Pour into greased and floured cake pans. Bake until toothpick inserted in center comes out clean.

ALMOND BUTTERCREAM FROSTING:

you will need:

1 cup Butter, Softened
3 teaspoons Pure Almond Or Vanilla Extract
8 cups Powdered Sugar
⅔ cups Heavy Cream

Frosting directions:
Beat the butter until fluffy. Beat in the extract. On low, beat in the powdered sugar and cream, alternating between the two until the frosting is smooth and the consistency is what you would like!

this was our first fourth of july sans fireworks. we were not able to buy any because of this, and because we had a big day planned for July fifth, we didn’t venture into the city to watch the Boston fireworks. It’s on the top of our list for next year!

flashback friday…

right at this moment: i feel completely american, one hundred percent, from the top of my head to the tips of my toes with shivers. i always get that i-think-i-might-cry-about-anything-patriotic- feeling leading up till the fourth. actually, i feel this way every day, but much more intense leading up to the fourth. i always tear up during the national anthem at baseball games… and, also during the olympics.

i see soldiers, in uniform, and i could cry. i see flags, cry. i hear our national anthem, more glossy eyes. i feel the planes fly overhead as our local parade begins. tears.

i love driving around town and spotting all the temporary firework shops, i could stop each time i drive by and buy another four dozen parachute-fireworks for kj.

we are free, our land is beautiful, we are resourceful and educated. we are liberty. honor. we are equal. we are stars and stripes, red white and blue.

i feel…proud.


back in july 1998, our first baby girl was only five months old when we attended alamo, nevada’s july fourth festivities.

the day was all about america. family. small town. love. celebration.

{and notice our chunky monkey! she hit 24 pounds at 4 months! best way to protect your babies heads from the sun…bandanas!}

…that everyday, you live your passions and know your bliss.

i am heading out of town for the next twelve days…
miss twelve has dance nationals in beverly hills, again. we get to go to a ‘SYTYCD’ show, dusty will bring the other three munchkins next week to meet up with us, and we’ll hit disneyland, visit relatives in laguna beach! ahhhh, i can’t wait for that beautiful southern california weather.
i’m traveling with my computer, and i will still be blogging.

the provo freedom festival…

is a local festival that coincides with the fourth of july, every year.

the festival honors four values…

family.
freedom.
god.
country.

i love the HUGE celebration for america.
the activities included in the festival are phenomenal.

there are traditions that melt my soul, every year.
my american heart beats and my eyes tear when the

three f-16′s fly over utah county for the stadium of fire.
i stand amazed when my body truly trembles from their power,
to me, it represents so much, so much bigger than me.

i love waking up and seeing the hot air balloon festival right above us. as we were driving to breakfast, i snapped a picture of kj looking right out his window with four of the balloons in his immediate view!

we joined dear friends for the parade this year.

do you remember little bronson?

he is doing so good! he is one healthy, handsome, all-american boy!!!

my soul knotted up, like every year, when the plane flew overhead to begin the parade. when the soldiers walked by in the parade, i turned around and met the gaze of teary eyes from my sweet sweet husband. as the soldiers went by in their vehicles, marines walked the outskirt of the parade route and gave high fives to everyone along the sides. kj was right there, waiting with so much excitement. it was so tender to see his pride and adoration for the soldiers. they are so brave, so courageous, thank god for the service they give to all of us.

fireworks!

it’s true. i love fireworks just as much as kids do. fireworks are one more great way to celebrate how much i love the US of A. i could go broke making trips to the fireworks stand. especially when i watch my little man spending hours in the driveway chasing parachutes. lighting smoke bombs. throwing pop-its.

on saturday evening we gathered with our neighborhood on a nearby hill, snuggled in blankets and watched the big fireworks from stadium of fire.

on sunday evening we did our family fireworks in front of our home with friends.

on monday afternoon we did daytime fireworks.
KJ had the coolest BIG parachute firework that sent 35 parachutes into the air!

then on monday night we gathered at a friends home to do family fireworks, again.

you’ll notice in a couple photos below, my myla is in pink, front and center with her lighter & the boys…that’s my girlie-tomboy, she loves hangin’ with the boys!

because we are in utah, and the holiday landed on a sunday this year,
